5 Meatless Lunch Sandwiches That Kids Will Love




                                    

         1  Goat Cheese and Honey Sandwich

Ingredients

2 Tbsp goat cheese
1 whole-wheat English muffin, split and toasted
1/4 cup walnuts, halved and toasted
3 to 4 fresh basil leaves
2 tsp honey

Directions

Spread goat cheese on toasted muffin halves. Top each with walnuts and basil and drizzle with honey.

                                            2. Tomato Sandwich

Makes 1 sandwich

2 slices dense wholegrain bread with lots of seeds (my favorite is Eli’s Health Loaf)


1 medium beefsteak tomato (New Jersey or otherwise), perfectly ripe
Mayonnaise

Kosher salt and coarsely ground black pepper



Toast the bread to your liking (I like mine nice and crispy, but I know some prefer a lighter toast). Let it cool for a bit while you core and cut the tomato into 1/8-inch slices. Slather one side of each piece of toast with about a teaspoon and a half of mayonnaise (more or less if you like) and layer as many of the tomato slices as you can on top of one one piece of toast. Sprinkle generously with salt and pepper. Top with the other piece of toast, cut in half (vertically or diagonally – the choice is yours, so go wild). Eat immediately, with a side of napkins to catch the tomato/mayo juices that will undoubtedly dribble down your chin


                                                   3Vit-A-Man Sandwich



INGREDIENTS



4 ounces cream cheese, room temperature
2 scallions, finely chopped (about 1/4 cup)
4 large round rolls, such as kaiser
1 to 2 large tomatoes, sliced
1 large cucumber, thinly sliced
3 cups loosely packed shredded carrot (2 to 3 carrots)
1 1/4 ounces alfalfa sprouts
1/4 head iceberg lettuce, shredded
1 medium avocado, thinly sliced

DIRECTIONS

Stir together cream cheese and scallions in a small bowl.
Split rolls in half horizontally. Spread bottom of each roll with 1 tablespoon plus 1 teaspoon cream-cheese spread. Layer tomatoes, cucumber, carrots, sprouts, lettuce and avocado on top. Return tops of rolls, pressing down firmly. Cut sandwiches in half, if desired, and serve.



                                                 4 Cheesy Sandwiches







INGREDIENTS


1/4 cup broccoli florets
1 1/4 cups ricotta cheese
1/4 small red bell pepper, very finely chopped
1/2 small carrot, very finely grated
2 slices whole-wheat bread, crusts removed

DIRECTIONS


Bring 1 inch water to a boil in a small saucepan. Add broccoli. Cover; let steam until soft. Drain. Let cool; finely chop.
Stir together ricotta, broccoli, bell pepper, and carrot in a medium bowl. Spread 1/4 cup ricotta mixture onto 1 slice of bread. Top with second slice. Cut into quarters. Leftover spread can be refrigerated in an airtight container up to 4 days.



                                     5Avocado Lettuce Tomato Sandwich 



The key to a delicious A.L.T. is salt. The flavor of both avocados and tomatoes shines with the addition of a little sprinkling of salt.

Ingredients

Toasted whole grain bread
Sliced avocado (see How to Cut and Peel an Avocado)
Lettuce (Boston Bibb or butter lettuce work well)
Sliced fresh tomato
Kosher salt
Mayonnaise

Method

1 For each sandwich, toast two slices of whole grain bread. While the bread is toasting, slice your tomato and avocado.
2 Slather as much (or little) mayonnaise as you like on one side of each slice of toasted bread. Add a layer of sliced avocado and sprinkle a little kosher salt over it. Add a layer of lettuce and a layer of sliced tomatoes. Sprinkle a little salt over the tomatoes too.
3 Top with the second slice of toasted bread. Cut the sandwich in half if you want, to make it easier to eat.  Enjoy!
